Ingredients:

For the Marinade:

  • 1/4 cup fresh mint leaves, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper to taste

For the Lamb Chops:

  • 4 lamb chops, about 1-inch thick
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (for searing)

For Mint Sauce (optional):

  • 1/3 cup fresh mint leaves, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions:

Marinade Preparation:

  1. Combine Ingredients: In a mixing bowl, combine the chopped mint leaves, minced garlic, olive oil, lemon juice, red wine vinegar, Dijon mustard, honey, salt, and black pepper.
  2. Mix Well: Whisk together until well combined, creating a flavorful marinade.

Preparing the Lamb Chops:

  1. Marinate: Place the lamb chops in a shallow dish or a resealable plastic bag. Pour the marinade over the lamb chops, ensuring they are well coated. Cover the dish or seal the bag and refrigerate for at least 2 hours, or overnight for a more intense flavor.

  2. Preheat Pan: When ready to cook, preheat a large skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil to the pan.

  3. Season Lamb Chops: Remove the lamb chops from the marinade and let any excess marinade drip off. Season the lamb chops with additional salt and black pepper if desired.

  4. Sear Lamb Chops: Place the lamb chops in the hot pan. Sear them for about 3-4 minutes on each side until they develop a nice, browned crust. Adjust the cooking time based on the thickness of the chops and desired doneness (e.g., 145°F/63°C for medium-rare).

  5. Rest: Once seared to your liking, transfer the lamb chops to a plate and let them rest for 5 minutes. This helps to lock in the juices.

Mint Sauce Preparation (optional):

  1. Combine Ingredients: In a small bowl, combine the finely chopped mint leaves, olive oil, lemon juice, honey, minced garlic, and a pinch of salt and black pepper.
  2. Mix Well: Stir until well combined to form a fragrant mint sauce.

Serving:

  1. Plate the Lamb Chops: Arrange the lamb chops on a serving platter or individual plates.
  2. Add Sauce: Drizzle the optional mint sauce over the lamb chops or serve it on the side for dipping.
