Chorizo-Stuffed Squid Delight

Ingredients:

  • 10 medium-sized fresh squid (cleaned with heads and tentacles reserved)
  • 200g Spanish chorizo (finely chopped or crumbled)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 small red bell pepper (finely diced)
  • 1 small green bell pepper (finely diced)
  • 1 small tomato (chopped)
  • 1/2 cup fresh parsley (chopped)
  • 1/2 cup breadcrumbs
  • 1/4 cup white wine
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 375°F (190°C).

  2. Prepare the squid:

    • Make sure the squid tubes are thoroughly cleaned. Reserve the tentacles and heads.

  3. Cook the stuffing mixture:

    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the chopped chorizo and cook until it releases its oils and begins to brown.
    • Add the onion, garlic, bell peppers, and reserved squid tentacles. Cook for about 5-7 minutes, until the vegetables are softened and fragrant.
    • Add the chopped tomato, smoked paprika, salt, and pepper. Cook for an additional 3 minutes.
    • Stir in the breadcrumbs and fresh parsley. Mix well to ensure everything is combined. If the mixture seems too dry, add a splash of white wine. Remove from heat and let it cool slightly.

  4. Stuff the squid:

    • Using a small spoon, gently stuff each squid tube with the chorizo mixture. Be careful not to overfill; leave some room at the top so you can secure it with a toothpick or skewer.

  5. Sear the stuffed squid:

    • In the same skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat.
    • Add the stuffed squid tubes and cook for about 2 minutes on each side, or until they are lightly browned. This step helps to seal in the flavors.

  6. Bake the stuffed squid:

    • Transfer the seared squid into an oven-safe dish. Pour the white wine over the squid.
    • Cover the dish with foil and bake in the preheated oven for about 15-20 minutes, or until the squid is tender.

  7. Serve:

    • Remove the baking dish from the oven. Let it cool for a few minutes before serving.
    • Serve the Chorizo-Stuffed Squid Delight hot with lemon wedges on the side for a zesty garnish.

Tips:

  • Freshness: Ensure the squid is very fresh for best results. Squid tends to get rubbery if frozen for too long or not handled properly.
  • Chorizo substitutes: For a different flavor profile, you could try using other sausages or even ground meat with your preferred spices.
  • Presentation: Garnish with additional fresh parsley and a drizzle of olive oil for a beautiful presentation.
