Autumn Harvest Pork Tenderloin with Caramelized Apples

Ingredients:

For the Pork Tenderloin:

  • 1-2 pork tenderloins (about 2 lbs total)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder

For the Caramelized Apples:

  • 3 large apples (Granny Smith, Honeycrisp, or your favorite variety), peeled, cored, and sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • ¼ cup apple cider or apple juice
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Pork Tenderloin:

    • Preheat your oven to 375°F (190°C).
    • Pat the pork tenderloin dry with paper towels. Season generously with salt, freshly ground black pepper, dried thyme, dried rosemary, and garlic powder on all sides.
    • In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat.
    • Once the oil is hot, sear the pork tenderloin on all sides until it’s golden brown (about 2-3 minutes per side).

  2. Roast the Pork Tenderloin:

    • After searing, transfer the skillet to the preheated oven.
    • Roast the pork tenderloin for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
    • Let the pork rest for at least 5-10 minutes after removing it from the oven to allow the juices to redistribute.

  3. Prepare the Caramelized Apples:

    • While the pork is roasting, start on the apples. In a large skillet, melt the butter with the olive oil over medium heat.
    • Add the apple slices to the skillet. Cook, stirring occasionally, until they start to soften and turn golden, about 5-7 minutes.
    • Sprinkle the brown sugar, cinnamon, nutmeg, and a pinch of salt over the apples. Stir to coat the apples in the sugar and spices.
    • Pour in the apple cider (or apple juice) and lemon juice. Cook, stirring frequently, until the liquid has reduced and the apples are caramelized and tender, about 5 more minutes.

  4. Assemble and Serve:

    • Slice the rested pork tenderloin into medallions.
    • Arrange the pork slices on a serving platter and spoon the caramelized apples over the top.
    • Garnish with fresh thyme or rosemary if desired.

Additional Tips:

  • Apple Variety: Use a mix of apple types for a variety of textures and flavors.
  • Wine Pairing: Consider serving with a crisp white wine, like a Chardonnay, or a light red, such as Pinot Noir.
  • Side Dishes: Complement the dish with roasted root vegetables, mashed sweet potatoes, or a fresh green salad.
