Ingredients

  • 4 large bell peppers (red, yellow, orange, or green)

  • 1 cup cooked quinoa

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1/2 cup crumbled feta cheese

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh basil

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Lemon wedges (for serving)

Instructions

Prepare the Bell Peppers

Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish, standing upright.

Make the Filling

In a mixing bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, feta cheese, parsley, basil, olive oil, garlic, oregano, salt, and pepper. Mix until well combined.

Stuff the Peppers

Spoon the filling mixture into each bell pepper, packing it tightly. Place the stuffed peppers back into the baking dish.

Bake the Peppers

Bake in the preheat over for 30 minutes, or until the peppers are tender and slightly charred on the edges.

Remove the peppers from the oven and let them cool slightly before serving. Garnish with additional parsley and serve with lemon wedges.
