Crispy Almond-Crusted Pan-Fried Trout
Ingredients:
- 4 trout fillets (about 4-6 oz each)
- 1 cup blanched almonds, finely chopped or ground
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 tbsp milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 cup fresh parsley, finely chopped (optional, for garnish)
- 1 lemon, cut into wedges
- 4 tbsp unsalted butter
- 3 tbsp olive oil
- Fresh parsley, chopped (optional, for garnish)
- Lemon wedges, for serving
- Salt and black pepper to taste
Instructions:
-
Prepare the Fish: Pat the trout fillets dry with paper towels. Season both sides with salt and black pepper.
-
Setup Breading Station:
- First Bowl: Add the all-purpose flour.
- Second Bowl: Whisk together the eggs and milk.
- Third Bowl: Combine the finely chopped or ground almonds with paprika and garlic powder.
-
Coat the Fish:
- Dredge each trout fillet lightly in the flour, shaking off any excess.
- Dip into the egg mixture, ensuring it’s completely covered.
- Finally, press the fillet into the almond mixture, ensuring it’s well-coated on both sides.
-
Preheat the Pan:
- In a large skillet, heat the olive oil and 2 tbsp of butter over medium heat until the butter is melted and begins to foam.
-
Cook the Trout:
- Place the almond-crusted trout fillets in the skillet, cooking in batches if necessary to avoid overcrowding the pan.
- Cook for about 3-4 minutes on each side, or until the fish is golden brown and crispy, and the internal temperature reaches 145°F (63°C).
-
Finishing Touch:
- Add the remaining 2 tbsp butter to the skillet at the end of the cooking process for extra flavor.
- Once the butter has melted, you can spoon it over the fillets to coat them lightly.
- Serve:
- Remove the fillets from the skillet and place them on a platter.
- Garnish with freshly chopped parsley and serve with lemon wedges on the side.
Tips:
- Almonds: For a finer texture, use almond flour instead of chopped almonds.
- Alternative method: If you prefer baking over frying, you can place the prepared fillets on a baking sheet lined with parchment paper and bake at 400°F (200°C) for about 10-12 minutes, or until crispy and cooked through.
- Side Suggestions: Pair the trout with a fresh green salad, steamed vegetables, or roasted potatoes.
