Crispy Almond-Crusted Pan-Fried Trout

Ingredients:

  • 4 trout fillets (about 4-6 oz each)
  • 1 cup blanched almonds, finely chopped or ground
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 cup fresh parsley, finely chopped (optional, for garnish)
  • 1 lemon, cut into wedges
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • Fresh parsley, chopped (optional, for garnish)
  • Lemon wedges, for serving
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Fish: Pat the trout fillets dry with paper towels. Season both sides with salt and black pepper.

  2. Setup Breading Station:

    • First Bowl: Add the all-purpose flour.
    • Second Bowl: Whisk together the eggs and milk.
    • Third Bowl: Combine the finely chopped or ground almonds with paprika and garlic powder.

  3. Coat the Fish:

    • Dredge each trout fillet lightly in the flour, shaking off any excess.
    • Dip into the egg mixture, ensuring it’s completely covered.
    • Finally, press the fillet into the almond mixture, ensuring it’s well-coated on both sides.

  4. Preheat the Pan:

    • In a large skillet, heat the olive oil and 2 tbsp of butter over medium heat until the butter is melted and begins to foam.

  5. Cook the Trout:

    • Place the almond-crusted trout fillets in the skillet, cooking in batches if necessary to avoid overcrowding the pan.
    • Cook for about 3-4 minutes on each side, or until the fish is golden brown and crispy, and the internal temperature reaches 145°F (63°C).

  6. Finishing Touch:

    • Add the remaining 2 tbsp butter to the skillet at the end of the cooking process for extra flavor.
    • Once the butter has melted, you can spoon it over the fillets to coat them lightly.

  7. Serve:

    • Remove the fillets from the skillet and place them on a platter.
    • Garnish with freshly chopped parsley and serve with lemon wedges on the side.

Tips:

  • Almonds: For a finer texture, use almond flour instead of chopped almonds.
  • Alternative method: If you prefer baking over frying, you can place the prepared fillets on a baking sheet lined with parchment paper and bake at 400°F (200°C) for about 10-12 minutes, or until crispy and cooked through.
  • Side Suggestions: Pair the trout with a fresh green salad, steamed vegetables, or roasted potatoes.
