Garlic Lemon Shrimp Scampi Delight Recipe

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2-3 tablespoons)
  • 1/4 cup dry white wine (like Sauvignon Blanc) or chicken broth
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
  • 8 ounces linguine or spaghetti
  • Lemon slices, for garnish

Instructions:

  1. Prepare the Pasta:

    • Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add the linguine or spaghetti and cook according to the package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain the pasta and set aside.

  2. Cook the Shrimp:

    • In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Once the butter is melted and bubbly, add the shrimp in a single layer. Season with salt and pepper. Cook the shrimp for 2-3 minutes on each side, until they are pink and opaque. Remove the shrimp from the skillet and set aside.

  3. Prepare the Sauce:

    • In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute, or until the garlic is fragrant but not browned.
    • Add the lemon zest and juice, and pour in the white wine (or chicken broth). Bring to a simmer and cook for about 2-3 minutes, allowing the liquid to reduce slightly.

  4. Combine and Finish:

    • Lower the heat to medium and return the shrimp to the skillet. Toss to coat them in the sauce.
    • Add the drained pasta to the skillet and gently toss everything together. If the mixture seems dry, add a bit of the reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.
    • Stir in the remaining 2 tablespoons of butter and the chopped parsley. Taste and adjust seasoning with additional salt and pepper, if needed.

  5. Serve:

    • Transfer the Garlic Lemon Shrimp Scampi Delight to serving plates. Garnish with lemon slices and an extra sprinkle of fresh parsley.
    • Serve immediately with a side of crusty bread to soak up the delectable sauce, and enjoy!

Additional Tips:

  • Shrimp: Ensure the shrimp are fully thawed if they were frozen. Pat them dry with paper towels to avoid excess moisture.
  • Wine: If you prefer not to use wine, chicken broth is a great substitute that will still provide a rich flavor.
  • Add-Ins: For added texture and flavor, consider tossing in a handful of cherry tomatoes, baby spinach, or artichoke hearts during the final step.
