Mediterranean Tuna Nicoise Delight
This recipe is a refreshing take on Tuna Nicoise, a classic salad featuring tuna, vegetables, and eggs, inspired by the flavors of the Mediterranean. Perfect for a light lunch or a satisfying dinner, this salad combines vibrant ingredients with a zesty dressing.
Ingredients:
Salad:
- 2 cans of high-quality tuna packed in olive oil (5-6 oz each), drained and flaked
- 8 baby potatoes, halved
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1 small red onion, thinly sliced
- 2 cups mixed salad greens or baby arugula
- 4-6 anchovy fillets (optional)
- 1/2 cup green beans, trimmed
- 1/4 cup capers, drained
- Fresh parsley, chopped (for garnish)
Dressing:
- 1/3 cup extra virgin olive oil
- Juice of 1 lemon
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1 tablespoon white wine vinegar
- 1 teaspoon honey or maple syrup
- Salt and freshly ground black pepper, to taste

Prepare the Potatoes and Green Beans:
- In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 12-15 minutes.
- About 2 minutes before the potatoes are done, add the green beans to the same pot to blanch.
- Remove the potatoes and green beans with a slotted spoon and transfer to a bowl of ice water to stop the cooking process. Once cooled, drain and set aside.

- In the same pot of boiling water, gently lower the eggs and boil for about 10 minutes for hard-boiled eggs.
- Transfer the eggs to a bowl of ice water to cool. Peel the eggs and cut them into halves or quarters.

- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, white wine vinegar, honey or maple syrup, salt, and pepper. Adjust seasoning to taste.
- Assemble the Salad:
- On a large platter or in individual bowls, arrange the mixed salad greens or baby arugula.
- Distribute the potatoes, green beans, cherry tomatoes, Kalamata olives, red onion, and capers evenly over the greens.
- Place the flaked tuna, hard-boiled eggs, and anchovy fillets (if using) on top.
- Drizzle the salad generously with the dressing.
- Garnish with freshly chopped parsley.
