Savory Marsala Chicken Delight Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • Salt and black pepper, to taste

  • 2 tablespoons butter
  • 8 ounces cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Chicken:

    • Start by pounding the chicken breasts until they are of even thickness (about 1/2 inch thick).
    • Season both sides of the chicken breasts with salt and black pepper.
    • Dredge the chicken in the all-purpose flour, shaking off any excess.

  2. Cook the Chicken:

    • Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
    • Once the oil is hot and the butter has melted, add the chicken breasts. Cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken breasts from the skillet and set aside.

  3. Sauté the Vegetables:

    • In the same skillet, add the sliced mushrooms. Cook until they begin to brown, about 5 minutes.
    • Add the chopped onion and minced garlic to the skillet. Continue to cook for another 2-3 minutes, until the onion is translucent and the garlic is fragrant.

  4. Prepare the Marsala Sauce:

    • Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom of the skillet.
    • Allow the wine to reduce by half, about 3-4 minutes.
    • Add the chicken broth, heavy cream, dried thyme, and dried rosemary to the skillet. Stir to combine.

  5. Simmer the Chicken:

    • Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top of the chicken.
    • Reduce the heat to medium-low and let the chicken simmer in the sauce for about 10 minutes, or until the sauce has thickened slightly.

  6. Serve:

    • Taste the sauce and adjust seasoning with additional salt and pepper if necessary.
    • Garnish the chicken with freshly chopped parsley before serving.

  7. Enjoy:

    • Serve the Savory Marsala Chicken Delight over pasta, rice, or mashed potatoes to soak up the delicious sauce.
